Tapioca is processed from the starchy pulp of cassava roots and used in various forms, including flour, pearls, and flakes. It is versatile and features in many African cuisines in different ways, depending on the region. How to use it: Tapioca is most commonly enjoyed as a dessert, particularly in the form of tapioca pudding. In this dish, the tapioca pearls are cooked in milk along with sweeteners, resulting in a creamy and slightly chewy texture. Additionally, tapioca can be soaked in water, milk, or coconut milk. This method is especially popular in West Africa, where it is often eaten as a quick snack or breakfast.
